While commonly used in desserts, the uses of coffee aren't limited to sweets. Barbecue sauces and glazes for meat, chili and even pot roasts benefit from a dash of the ground coffee bean.

In any coffee cake recipe, freshness is essential, so either buy freshly ground coffee or roast and grind your own then use right away. Some of the best coffee cake recipes call for brewed coffee, make it just before preparing the cake, and use good filtered water. Note; most recipes call for coffee two or three times as strong as you'd usually want to drink it.

Black Russian Cake

Select your favorite dark chocolate cake mix and add ...

  • a cup of vegetable oil
  • a pack of instant chocolate pudding
  • four eggs
  • a half cup of creme de cacao

Finally adda cup of your favorite Russian coffee. (1 oz vodka, 1/2 oz Kahlua, 5 oz hot black coffee.)

Beat everything together until until smooth and pour into a tube pan

Bake for 45 minutes at 350F (177C).

Coffee and Walnut Sponge Cake

Our best coffee cake recipe Makes a generous 8 inch ring cake.

Preparation time 30 mins to 1 hour and Cooking time 1 hour to 1 hour 20 mins. This coffee cake recipe is best made in a ring cake tin.

Ingredients you will need for this coffee cake recipe

  • 3 large eggs - separated
  • 1.25ml (¼ level tsp) cream of tartar
  • 225g (8oz) caster sugar
  • 100ml (4 fl oz) cold coffee
  • 2.5ml (½ tsp) vanilla essence
  • 100g (4oz) plain flour
  • 1.25ml (¼ level tsp) baking powder
  • 1.25ml (¼ level tsp) salt
  • 50g (2oz) shelled and finely chopped walnuts.
  • Finely sifted icing sugar - optional

Preparation and Cooking Method...

  1. Preheat the oven to 180C/350F/Gas 4.
  2. Line the base of a 20cm/8in ring cake tin with greaseproof paper. Do not grease the sides.
  3. Whisk the egg whites and cream of tartar until stiff peaks form, then gradually whisk in 50g (2oz) of the sugar until the mixture is smooth and glossy and stiff peaks re-form.
  4. Beat the egg yolks with the coffee and vanilla essence.
  5. Sift together the flour, baking powder and salt, then stir in the remaining sugar.
  6. Make a well in the center and add the coffee mixture. Then beat until light and fluffy.
  7. Stir in the walnuts and then fold in the whisked egg whites with a metal spoon until evenly blended.
  8. Turn out into the 8in ring cake tin
  9. Bake at 180C for 1 hour to 1 hour 20 minutes or until the top springs back when lightly touched with your fingertips
  10. When ready, invert the cake onto a wire rack to cool upside down. Once cold loosen with a palette knife and turn out onto a plate. Optionally, dredge with sifted icing sugar for a sweeter taste.

Espresso Brownies

To make brownies that are even better than Toklas', try one of our best coffee cake recipes.

  • Heat a cup of sugar, a quarter teaspoon of salt, and a stick and a half of butter in a sauce pan.
  • Add a teaspoon of vanilla and four ounces of chopped, semi-sweet chocolate and stir until well melted.
  • Now add a tablespoon of your favorite finely ground dark-roast.

For an interesting variation substitute with two teaspoons of espresso granules.

Stir until everything is well mixed, then transfer to a mixing bowl and let cool for a few minutes.

While still warm, fold in ...

  • three eggs
  • a cup of flour

Pour the mixture into a baking pan.

Bake for 30 minutes and set out to cool. Yum!
